Recipe – Sardine Pasta
3 - 4 packets of sardines in olive oil (I use King Oscar because the individual sardines are smaller and better quality)
1-2 cloves garlic
3 - 4 anchovies
handful of currents (can also use sultanas)
1 packet of penne pasta
Slice onion and sweat off slowly in covered pan with a little salt to bring out juices. Add crushed garlic for a few minutes, then add anchovies and currents and a little water and slow simmer for a few minutes until currents are plump and anchovies have dissolved.
At this point you can stop until ready to serve. You can prepare this much before guests arrive, which makes entertaining nice and easy.
When ready, cook pasta as per packet in salt water. Add sardines and can juices to pan. Toss only a few times so sardines keep their shape. Toast pine nuts in separate dry pan.
To serve, first layer cooked pasta on a flat platter, then cover with sardine mixture, then parsley and pine nuts.
Yum! Even the kids like it. For a healthier option I sometimes swap some of the sardines in olive oil for sardines in spring water.
